We’re more than halfway through this years handmade holidays! I’m starting to get peckish so I looked around to see what I could whip up. Then I found it and it’s an absolute classic! These cookies are great for at least 4 reasons: 1-they only require 2 ingredients 2-they’re no bake cookies 3-they take about 20 minutes or less 3-they’re addictively delicious!
Some people call these butterscotch haystacks, in my house we call them butterscotchies. [butter-scotch-eees]
Supplies needed: butterscotch morsels and chow mein noodles. I have also used broken up ramen noodles before, similar outcome but I prefer the chow mein noodles! You can also sub out the butterscotch morsels with milk chocolate morsels, white chocolate, etc!
In a microwave safe bowl pour in your whole bag of butterscotch morsels. Melt them in your microwave, starting with 1 minute, then stir and then continue heating up in 30 second intervals and stirring until fully melted. You do it in increments to avoid burning!
Now you’ll pour in your chow mein noodles. I recommend pouring in about a half bag. I forgot this and poured in 3/4 of a bag when I was making this batch and some of my butterscotchies were lacking the over amount of butterscotchie goodness. Learn from my mistakes.
I have seen where other people will mix in other things like nuts, non melted chocolate morsels, m&ms etc. If you do this I’d suggest making sure you’re not mixing in too much and loosing some of the oomph of the butterscotch holding everything together. So if you’re adding a bunch of nuts for example maybe put in less than half a bag, like 1/3 of the bag.
Once you’re all mixed up, I mean, your mix is fully incorporated, you’re going to drop some spoonfuls onto wax paper. I used two spoons so I was unable to take a picture of this process. With a spoon in each hand, grab a chunk of mix and then place it on the wax paper. It’s kind of like more controlled salad tongs but with spoons and using both hands! I let my batch cool in the fridge but you can definitely let them cool on your counter.
The only thing left is to enjoy your butterscotchies! Maybe even share them with friends and family! I like to store my butterscotchies in a tin and in the fridge because it keeps them fresh longer. This recipe also yields a large batch and for as much as I imply that I eat them constantly I do try to control myself. I know I have longer to enjoy them when they’re in the fridge and they’re kind of out of sight! Also for full transparency, all my butterscotchies didn’t fit in my cute tin so I put the rest in a bag!
